Hi ! I've some questions to ask. Do we change the speed of stand mixer each time forexample when we want to make firm peaks do we change the speed from 2 to 4 or when we want to make stif peaks do we change the speed from 4 to 6? And another question is it a must to add suger for having firm peaks or we can have it without adding any sugar? Sorry, but one more question Is this technique used for whipping the cream which we use for cake covering as well, if yes then if the cream was over beaten what should we do to bring it back?

Man my egg whites went to over beaten in probably less than a minute. I don't understand what happened. I did go full speed from the get go in the same kitchen aid pro mixer. They were room temperature too.

I don’t have the stand mixer, I have the electric hand one with two whisks and for some reason I never get fully stiff peaks. They always flop and stay just firm and I don’t know what to do!! There’s no tutorial online for fixing it and I need some help. Does anyone have any recommendations?

what do you do if your meringue smells eggy? is it just supposed to be like that?
i put vanilla essence in my swiss meringue. it was beautiful but then i overmixed it 🙁 i used only 1egg so i don't want to crack another just to use a little bit… any fix for the smell though?

You are the man with the tip on salvaging over beaten egg whites!! I've always had trouble getting to the stiff peaks and would basically churn butter. Adding one egg white and whipping by hand did the trick! Thanks!

I wish I watched this before doing the recipes on YouTube! 2 times I tried and the eggs wouldn’t become stiff. I realized it may be because I use the eggs straight from the fridge. And thank god for the fix on the overbeaten egg whites! Life saver.
